The star of this dish, panela cheese, is artfully paired with a vibrant salsa crafted from roasted tomatillos and poblano peppers. This inspired combination introduces a harmonious blend of bright, smoky undertones and a hint of warmth, perfectly balancing the cheese's inherent mildness. The preparation involves charring the poblano peppers and broiling the tomatillos, a process that intensifies their inherent sweetness and imparts a profound depth of flavor to the salsa. To elevate the dish further, a garnish of finely diced onions and fresh cilantro is added, infusing every bite with a refreshing zest and a lively textural contrast.

Preparing the salsa begins with positioning the oven rack in the upper-middle section, approximately six inches from the broiler unit, and preheating the broiler to a high setting. The roasted tomatillos are then added to a blender along with the prepared poblanos, fresh cilantro, lime juice, minced garlic, and a touch of sugar. This mixture is pureed until it achieves a silky smooth consistency. The resulting salsa is then transferred to a small bowl, seasoned with salt and cayenne pepper to taste, and, if desired, thinned with a bit of water before being set aside.

For the panela cheese component, a small yellow or white onion is finely diced and combined with finely chopped fresh cilantro in a separate bowl. This mixture is set aside as a topping. To prepare the grill, one chimney full of charcoal is lit. Once the charcoal is fully ignited and covered with a uniform layer of gray ash, it is carefully spread evenly across the entire surface of the coal grate. Alternatively, if using a gas grill, all burners are set to high heat, and the grill is covered and allowed to preheat for five minutes. Before grilling, the grate is meticulously cleaned and oiled. The panela cheese slices, cut into half-inch thick planks, are then grilled until they are beautifully browned on both sides, requiring approximately one to two minutes per side. Once grilled, the cheese slices are removed from the grill. Warm tortillas are prepared by cooking them on the grill for about thirty seconds per side until they are soft and pliable.

To assemble the dish, a generous layer of the freshly prepared salsa is spread on the bottom of a shallow serving dish or plate. The perfectly grilled panela cheese is then gently nestled into the salsa, creating an inviting presentation.
